{(No.43)} To Make an Orange Pudding

Take the peel of two sivil Oranges, boil them
in 3 quarters water till tender then pound
them in a Marble Mortar till they are very
fine, take 1/2 [pound] of Butter, 1/2 [pound] of sugar, 10 Eggs
7 whites 2 maple Bisketts grated, squeeze
the Juice of 2 Oranges in it mix it fine
Together, put a past at the Bottom of your
dish & a thin past over it, 1 Hour Bake it,

{(No.44)} To Make a Potato Pudding

Take 1 [pound] of Potatos & boil them, then beat them
in a Marble Mortar very fine, then take 1/2 [pound]
of fresh Butter, not melted & work the potatoes
with your Hands, with 1/2 [pound] of Loaf Sugar
finely beaten, put all these together, then
take six new Eggs, beat together a grated
Nutmeg, 1 Glass of sack, 1 1/2 oz of Cittron, 1 Oz
of candy'd Orange peel, with Past at the Bottom
and round the rim of the dish

{(No.45)} To Make white Mead

To every Gallon of water put a pint of Honey
& 1/2 [pound] of Loaf sugar, stir in the whites of Eggs.
Beat to a froth, & boil it as long as any scum
arises, when its Cold work it with yeast & to
every Gallon put the Juice & peel of a Large
Lemmon stop it up when it has done working &
Bottle it in 10 days
