{(No.48)} To Preserve Green Mellons

Slit your Mellons down the sides, & take out all
the seeds, & boil them in water, till tender but
not soft then pare them very thin, & put
them in Scalding water with a bit of Clear
Alum the size of a Nutmeg, Cover them Close
in the preserving pan, until they are
Green, let them doe very slow, then take
them up, & to every pound of them take
3/4 [pound] of the finest sugar, & A pint of water,
Boil it and scum it, then put in your
Mellons and let them boil softly a 1/4 of
an Hour, then take them of the fire, & put
them in a Glass, & keep them Close for 2
Days then put that syrup away, and
take 1 pint of water, & 1 1/4 [pound] of sugar, and
when the syrup boils, put them, & boil them
with as much Ginger as you Please
till they are Green & Clear, then put in
the Juice of 3 Lemmons & let them boil some
time after the Juice is in, put them up in
Glasses they will keep two Years, doe
them from the size of a French walnut
to the size of an Orange.
