{(No.53)} To Make the Duke of horfolks Punch

Take 1 Gallon of Brandy, & put the pareings very
thin par'd of six sivil Oranges & six Lemons, & steep them 3 days in the Brady, then take
1 1/2 Gallon of water, & 3 pound 1/2 of fine sugar, boil the
Water & sugar, 7 Minutes Clarify it with 16
Whites of Eggs beat to a froth, when you have
Strain'd off the Eggs, & scum'd it well, let the
Liquar stand to be Cold, then put the Juice
of Lemons & Oranges to your tast, but more
Orange than Lemon, & as well refined as you
can make it, then strain the Brandy from the
Peels & mix them together, put it in a Vessel
& let it stand six weeks, then Bottle it off,

{No.54} To Make Goosberry Cream

Take 2 Quarts of Gooseberries, put to them
as much water as will cover them, then
Scald them, & run them through a sieve
with a spoon, to a quart of the pulp put 6 Eggs
well beat, sweeten it to your tast, & when it is
Hot again put in 1 Oz of Butter, keep it stiring
all the time over a slow fire, till it grows thick
& Just simers, when almost Cold put in
Basons or Glasses

{( No.55)} To Collar Pork

Bone a breast of pork season it with savory
Spice & a great Quantity of thyme sage &
parsley, roll it in a hard Collar in a Cloth
& tie it Close, & boil it, when it is Cold
keepin it in Souceing Liquar,
