{(No.70)} To preserve Grapes or Gooseberries

Take your white Grapes when they are full
ripe, & stone & pill them, then take there weight
in Sugar, & wet your sugar with water, and
When you have Boil'd it to a pretty thick
Syrup, then put in the Grapes to it, & let
them Boil a pretty pase, & so Continue
them keep them Clean scum'd, till it begins
to Jelly, then take out your Grapes & if the
Syrup be not thick enough, boil a little
More, by it self, & when it is Cold, put the
Grapes in Glasses, with the Syrup.

{(No. 71)} To Make a white Pot

Take 2 quarts of new Milk, 8 Eggs, 4 whites,
beat up with a Little rose water, a Nutmeg
Grated, a 1/4 [pound] of sugar, Cut a penny Loaf in
Very thin Slices, & pour milk & Eggs,
over it, put in a little bit of Butter, on the
top, Bake it in a slow oven, half an Hour

{(No.72) } To Roast Lobsters

Baste them at first, with salt, & water warm
And towards the last, baste them with butter
and Catch what drops from them, & Draw
your Butter in it, with Nutmeg scraped
for the sauce, A Little drawn butter will
be Enough
