{(N.79)} To Make an Orange Custard
Take
Little of e peel Grated very fine, & put
as much Sugar to it as will make it sweet
give it a boil up, & strain it, & have
Ready 1/2 a pint of cream boil'd, with a
Little Nutmeg, mace, & Cinnamon, & the
whites of 3 New Eggs, beat them all together
And Serve it in What you please,
{No.80} To Make a Fricasee of Mushrooms
Peel your Mushrooms, then Quarter them, &
put them over the fire, in a Saucepan & let
them Stew, till all e Black water is Come
from them, then Pour it away, & take a peice
of Freash Butter, an Onion, Nutmeg, Cloves, & a
Blade of mace, a Little w t wine, a Little parsly,
Thyme, & savory, with some Salt, shred your
herbs fine, & let them Stew 1/2 an Hour then
take a the a little Juice of Lemon,& e Yolk of an Egg,
& beat them together to thicken your fricasee
So serve it up
{(No.81)} A Fricasee of Tripe
Cut your tripe into small slips, flouer it well
and put some beef Driping into a pan, & fry
it Crisp, then drain it well, from e fat, and
Clean your pan, then take some Butter and
flower, & make it of a pale Brown, then
put a Little good Gravy to it ,& the tripe,
And Toss it up together
