{(No. 82 ) }To make a Fricasee of sweet Breads

Half roast 3 Large sweet Breads, cut them
into Square peices, boil some roast beef
Gravy, with half a Nutmeg, some whole peper
a Shalot or two, & a Little salt, then strain it
And put your sweet herbs, to it, & stew them
till they are enough, put in a peice of Butter
Wrap'd in flower, & a Spoonful of Boil'd
Oyster Liquar Garnish with Lemon

{( No.83)} To Dress a Knuckle of Veal with rice

Take a Knuckle of Veal, cut of the Gristles, &
put them in a large, saucepan with a 1/4 poundof rice
An Onion or two Sliced, a Little mace, & salt,
put in what Water you think proper to
Make your Liquor strong & good, let it
boil very Slowly, & as it wastes put in a
Little more warm water, & let the Rice and
Gristles be boil'd Quite down, let the thick
part of the Veal be boil'd as a Knuckle of Veal
Generaly is, Serve it up, on the rice & Gristles

{(No.84)} To Pot Fowl in General

Season with peper, salt, mace, & nutmeg, &
And put them into an Earthen pan Just Cover'd
With water & bake them, then take them
from the Water, & when Cold, put them in a
Pan again, and pour Clarify'd Butter
over them
