{(No.85) }To Make Calves feet Flummery
Take two Claves feet, & split them & take
out e Large Bones, put to them 3 pints of
river Water, a Slice of Nutmeg, a blade of
Mace, a race of Ginger, & a Little Orange and
Lemon peel Cut very thin, put it over a
slow fire, & let it boil Gently, till it comes
to a Strong Jelly, taking off e scum, then
Strain it off, & let it stand till it is Cold, then
take off e settlement, & and to it 1/2 a pint of
Milk, put it over a slow fire, & take e Yolks
of 8 Eggs & beat them well together, with a
Little Cold Milk, & when your Jelly is lukewarm
put them into it, & keep it stiring till e Eggs
are sett, then run it through a sieve & put it into
Cups you must sweeten it to your tast,
{No.86} A White Soup
Boil 1/2
then put to it 2 quarts of strong broth,
herbs, Balls, & french roll, Cut in dice & all
fry'd, season it & put in forc'd Chicken in
the Middle
{( No.87)} Orange Butter
Take the Yolks of 3 hard Eggs, 1
Butter, a little fine sugar a Spoonful
of Orange flower Water, & work it
