{(No.94)} To Make Grape wine

To 3 pounds of Grapes when pick'd put 1/2 pounds of sixpenny
Sugar, and one quart of water, stamp the Grapes,
and Strain the Juice from them, then put the husks
in to the water, & let them stand 24 Hours then
Strain them of as dry as you Can, put that
Liquor to the Juice of the Grapes, you must put
in some of your sugar to the Juice of the Grapes,
When they are first Strained off, & the remaindor
when the Whole is mix'd you must let Stand one
Year in Your Vessel, & then Bottle it off,

{(No.95)} To Make Cherry Wine

Take 3 pounds of Cherrys, bruise them with your
finger, put a quart of water, to them let them
Stand 24 Hours, to every quart of water
put a pound of sugar, Drain your Liquor
through a seive, then put the sugar in, let it
Stand 24 Hours then take off the scum, turn
it up but not put the Bung in, for it will work
some days let it Stand 1 Month before you draw it off
stir the fruit well in the water

{(No.96) }To Preserve green Gage Plumbs

Take the plumbs when they are Just begining
to ripen, pare them very thin, & to 1 pound of Plumb
put poundsof fine sugar & a spoonful of water to a
Plumb, boil the water & some of Sugar & pour
it on the Plumbs, & Cover them Down a Little
While, then boil them till they are Clear & green,
Strewing in the rest of the Sugar, & keeping them
Covered at first.
