To Preserve Damsons
To every pound of Damsons a pound of sugar, take some of the Damsons & boil them in
Water, then take half a pint of that Liquor
To wet your sugar, put 1/2poundof sugar more
To Answer your Liquor, boil it, boil your
Sugar and scum it Clear, and when it is
Cold cut your Damsons in the side & put
them in, & let them boil softly, scum them
a Little, then set them by till next day.
then set them on again & let them boil a
Little Longer, shake them, & scum them, till
they look clear, then put them in pots &
Boil the syrup a Little more, and put it to them

Take 3poundof Butter, work it with your Hands, till
it's no thicker then cream, then put in the Yolks
of 24 Eggs beat up by degrees, take 3 pounds ofbutter
the whites & beat & work them inup
by degrees, take 3poundof flower, & 3 pounds of sugar
dryws & sifted & strewed in by degrees, & 3 ounces
of Carraway seeds, & a little sack cover the pan
with a thin past & Butter it, thatit may slip
out, you must keep it stirring till it's in the
Oven, which must be very hot.
