{(No. 118)} A Carolina Rice Pudding

Take half a pound of Rice, wash it Clean,
put it in a Sauce pan, with a Quart of
Milk, keep it Stirring till it is very thick;
Take great Care it Dont Burn; then turn it
into a pan, & grate some Nutmeg into it, & two
teaspoonfuls of Beaten Cinnamon, a Little
Lemon peel Shred fine, six Apples, par'd
& Chopped Small: Mix all together with the
Yolks of 3 Eggs, & Sweetened to your palate,
then tie it up Close in a Cloth; put it into
Boiling water, & be sure to keep it Boiling
al the Times, an Hour & a Quarter will Boil
it, Melt Butter & pour over it & throw some
fine Sugar all over it; A Little wine in the
Sauce will be a great Additionto it

4 1/2 [pound] of Currands 3pounds of Flower 2 poundsof
Butter 1 ounce of suet Spice 3/4 pounds of Sugar
12 Eggs Half the Whites 3 Hours
Bake it
