Sugar, as much common Salt as you
Use for a Buttock of Beef, Let it lay
a Month, then Sow it very tithe in a
Cloth Boile it 10 Hours put in the
water Cold, when you Boile it; and when
Tender take it out & Ty a Cloath over the
other Tithe and put it upon a Dish with a
Board upon it and waite to press it Down
Close and the next Day Take all the
Clothes off and then take the Loose skin
from it

To Make Catchup of Walnuts

Take the Walnuts when they are fit for
Pickeling pound then in a Mortar, then Strain
the Juce, through a flannell Bag put to every
Quart of Juce a pint Vinegar Let it Stand
four Days then Boile it over a Slow fire to Half
th Quantity Scum it a Little put in some
