The Calves Head must be[ Sealded ] and not
Skined, Cut it in Slices about as Large as a
Crown Piece Take also two Neat Feet Boiled
whole, and then Cut in Pieces stew them in good
Veal Broth put to them an Onion a Faggot of
Sweet Herbs half a Pint of Madeira; or Common
White Wine that is not sweet and Tea Spoonful of
Red pepper Keep them Boiling gently till they are
quite Tender Serve them up; with forced Meat
Balls and yolks of Eggs boiled Hard: The Broth
may be made of the Neck and Bones of the Head:
it should be well Seasoned with Pepper Onions
and Herbs and a Little Salt then strain it of quite
Clear from Fat; about three Pints of Broth will be
Sufficint for the Whole Head: the Bones & Coarse
Peices of the Neck will make the quantity
Burn a Little Butter not to Brown Chiann Pepper
and Madeira made Hot put to the Sauce
