To make Minced Pyes

Shred a pound of the Inside of a Surline of Beef
1 pound 3/4 of Beef Suet 5 pippens a Gratted Lemon
peele season it with 1 ounce of sweet Spices 1/2 pound of Sugar
2 pounds of Currands 1/2 a Pint of Sack a Little orange
flower water the juice of three Lemmons a 1/4 of a pound
of Cittron Lemon and Orange peele mix these together
and fill your pyes put a Tea Spoonful of Red Wine
into Each pye

To preserve Apricots in Jelly

Take 1 douzen of green pippins or Codlings, pared
& Quarterd, Slice them into a pint of Water
& put in 3 or 4 of the [worst ] Apricots Sliced &
The pairings of the rest, Boil it as fast as you
can tell half is Boiled away Then take to this Liquor
a pound of Apricots pared & Stoned, a pound & half of [Lump]
Suger put the Liquer in the Suger, & when it is
Boild up & is scum'd put in You Apricots when
they look clear they are Enough; Run the Liquor
thro' a Jelly Bag, before you put your Suger in;
