128 To make a Carrot Puding the best way

Take half a pound of Grated white Bread & half
a pound of Carrot Grated & 6 ounces of New Butter
& six Eggs & four Whites & as much Ginger as you
think fit & a Spoonful or two of Orange Flower,
or Rose Water, & a little cream, Mix all together
& pat it in a Dish Butterd or a putt past under it
About 1 hour Bakes it ; Take care it does not Scorch.

To Make Hams

To every Ham, one ounce of salt petre
Rub it all over, let them lay 24 Hours, then put
2 quarts Stale Beer in a Sauce pan, half a pound
of Bay Salt Half a pound of Common salt Boil
them all together, pour it Boiling Hot on the Hams,
Rub & & turn them Every Day for a fortnight
make them 2 Days over Saw Dust, then dry
them in the Chimney: NotaBene you must Boil
half a pound of Coarse Sugar in the Liquor
