To Make Cheese Cakes

Take a Gallon of New Milk & warm it:
& put in it a Cupfull of Rennet You must
set the Night before a bit of Rennet bag,
as big as a Crown peice in a Capfull
of Water & the next day put the Water
to Your New Warm Milk & when the Curd
is come put it in a Cheese Cloth, & Wave
it back & forwards till the whey is out of it
then take the Same Weight of new butter,
as Your Curd, & press it thro' a Seive
then put in 8 Eggs leaving out 4 Whites,
currants & lumpt sugar & Spices to Your
taste put them in Puff paste & bake them
in Pans:
