To Pickle Wallnuts

Take Your Wallnuts, put them in to Cold Water,
set it over the fire till the Water is very Hot,
but not to Boil, let them Stand in the Water a
quarter of an Hour, them take them out of that Water
& put them in to Cold Water with a large Handfull
of Salt, change the Water every Day for 10 or 12 Days
Rub of the out Side Skin when dry put Your
pickle to them Boiling Hot put in to Your pickle
Garlick Shallots, Mustard seed, Horse Radisk &
Whole Pepper:

Paste for Tarts

To half a pound of Flour, take 6 ounces of Butter
1 ounce or rather less of Loaf sugar beat, & sifted
rub them all together till the butter is quite small
& wet it very stiff with Boiling Water, it eats the Crisper

To Make Rice Cakes

quarter of a pound of Rice, quarter of a pound of Loaf sugar
both sifted, 4 Eggs, half the Whites well Mix'd together
You may add a few Almonds if you please
