Another Receipt for Spunge Bisquets

Eight Eggs all the whites, 1 pound sugar,
3/4 of a pound of flower, a little white wine
a little mace & nutmeg, bear altogether for
an Hour, Bake'd in a Quick Oven

To make Currant Wine

Two Gallons of water to one Gallon of Juice
3 pound of sugar to a gallon, strain it, put it in
the Cask, & when you think it has work'd enough
put in a Quart of Brandy to 7 Gallons; rather less
sugar will do if you make but a small Cask

To preserve Gooseberrys

A pound & a half of sugar wet with a little
juice of Red Currants make it boil, & then add
2 pound of Gooseberrys to the Liquor, & boil
them Enough to keep:

To make a good side Dish

Take some large Cucumbers & scoop out all
the seeds, & fill them up with a good force meat
made with Veal, & fry them, & stew them in
a Strong Gravy, & serve them up in it
NotaBene they must be pared after they are
scooped, before you put the force meat in it:
