To make Rum shrub

To every Quart of Rum 8 or 9 Oranges,
and half a pound of good Loaf Sugar
disolve the Sugar in the Juice, before the Rum
is put to it,put it into a Cork, shaking
it every day or two several times when
settled & fine, draw it of and Bottle it for use

To make Lemon Water

Pare the rinds of 12 Lemons very thin
squeese out the juice & pulp but do not pat
in the seeds nor white, steep all this in
7 pints of Common Brandy for 4 Days
Take six Pints of water & a Pound & half
of fine sugar, boil it & scum it till clear
when Gold put it to the afore said ingredeints
The Night before you put it through your Jelly
bag put in a Quart of boiling milk
