Par boil it, cut it in peices, beat a little
mace, Nutmeg, Alspice, cloves & a very little
bagon Pepper, salt, & Lemon Peel Grated
sweet Marjorum & Thyme; season the Head
with it, lay it in a Dish, put in a little
gravy, beat the Brains with a spoonful
of white wine & pour them over it,
shake in a little Flour & pour in a
little Hot Water, before it is Baked Butter
a Paper & lay on it boil hard Eggs &
put in it, & Garnish the Dish with
Lemon Barberrys
