To make Spanish Puffs

Take a Pint of water, a Quarter of a pound
of Butter, a little salt, put it in a Stewpan
& let it boil, till the Butter is melted,
take a pint of flouer, & put in to the Stewpan
stiring it as fast as you can, with a wooden
spoon & break all the nobs till tis almost
cold, then break in 4 Eggs & stir it well
fry them brown with Lard put the batter in
with a Tea Spoon in small bits to fry
The same Batter makes very good fritters
made a little thiner
