To Hash a Calves Head

Boil the head almost Enough & when cold
take one half of it, with the Tongue, cut it
in Slices, clear from the bone & put it
in to a pan with some strong broath
about 2 spoonfuls of White Wine, a bunch
of sweet Herbs 2 or 3 shallots, a Nutmeg in
Quarters, a little whole pepper, & let them
stew over a Slow fire till it is Enough
then put in 1 large Anchovy the Yolks of
2 Eggs well beat thicken it up with a
peice of Butter Then have ready, some
slices of thin Bacon Fried, some force meat
Balls the Brains first boild then dipt in Batter
& fry in little cakes, The other half of the Head
broild with crums of Bread strewd over it
being first washed over with the Yolks of Eggs
pour the Hash in the Dish, lay the broild head
upon it, & garnish it with the Brains
Balls, & Lemon
