To Hash a Calves Head
Boil
take one half of it, with the Tongue, cut it
in Slices, clear from the bone & put it
in to a pan with some strong broath
about 2 spoonfuls of White Wine, a bunch
of sweet Herbs 2 or 3 shallots, a Nutmeg in
Quarters, a little whole pepper, & let them
stew over a Slow fire till it is Enough
then put in 1 large Anchovy e Yolks of
2 Eggs well beat thicken it up with a
peice of Butter Then have ready, some
slices of thin Bacon Fried, some force meat
Balls e Brains first boild then dipt in Batter
& fry in little cakes, The other half of e Head
broild with crums of Bread strewd over it
being first washed over with e Yolks of Eggs
pour the Hash in the Dish, lay the broild head
upon it, & garnish it with the Brains
