To make Elder-berry Wine

Take one Bushel of Elderberrys when pick'd
to nine Gallons of Water let them soak 4 Days
then boil it well, & strain of the Berrys
to the clear Liwuor, put 38 pound of Common
lump sugar, 2 oz of Bruised Ginger 1 ounce of
all spice half an ounce of Cloves, the same of Mace
to be boild again one Hour, 1 Gallon of water
to be added to allow for boiling away
then to be workd in a Tub; when put inthe
Barrel add 1 Bottle of Brandy; not to be
stopd down under two or three Days
To be Bottled of when fine

To Pickle Mushrooms

Rub the mushrooms with a bit off Cannel
& salt & put them in Salt & Water, then
scald them in salt & Water when done dry
them in a Cloath well, then put them in
some common Vinegar, boiling let them stand
all night then drain them well & put them in
doubled Distilld Vinegar, with a little white
pepper & Mace, Tie them over with a Bladder
