Artificial Anchovys

To a Peek of Sprats, take 2 pound of common Salt,
2 quarter of a pound of Baye Salt, Quarter pound Salt Petre
2 ounces of Prunella Salt & a small quantity
of Cochineal, Pound all in a Mortar,
put them in to a stone jar, a row of Sparts
then a layer of your Compound, &
and so on alternately to the Top
Press them hard down cover them close
let them stand for Six months, & they
will be fit for use Take particular care
that Your Sprats be very fresh, & do not
wash or Wipe them, but take them
just as they come out of the water:

Pickle Mushroons

Rub the mushroons with a bit of Flannel & Salt
& put them in salt & Water, then Scald them in
Salt & Water, when done dry them in a Cloath,
then put them in some common Vinegar Boiling
let them stand all night then drain 'em well
and put them in double distild Vinegar
with a little white pepper, & mace, Tye them
over with a Bladder
