To make Elderberry wine
To every 5 Gallons of water take 20lb of Malligo Raisons &
& shread m very small but first let m be rub'd very cleane e water
must be extreamely well boyled & put upon e Reasons boyling
hott, & n it must stoop 10 dayes stirring m once a day, & keeping it
Closd [covvied] & passe e Liquor through a haird cive, heve in
[rediefse] 6 pints of Elderberrie Juce w ch must be infusd, as for e
Jelly of Currance e cleare only being taken put it cold to e Liquor
stirring m well together, then [Jim] it & stop it up, Let it stand in a
warme place 6 weeks or 2 monthes n Bottle it
To make Quince Wine
Take [...ounces] Quinces & wipe m dry Cleane m grate m on
a Large grator as [nere] e cores as you can, but len none of
e hard w ch is about e cores go in to e rest, n straine m into
an Earthen pott, & to a Gallon of Liquor put 2 lb of fine Loafe
suger, stir it till yo r suger be desolved, n cover it close & stir it
no more, but lett it stand 24 hours & by e time it will be
cleare Enough to bottle. you must [let] it out of yo r pott w th
a [Cheanery] dish or a silvor Ladle for yo r pot must not be [slird]
for feare of mixing yo r jelling/
