Pan Broiled Steak
Remove from steak all bone
fat + cartilage. Oil a smoking
hot frying pan with small
portions of the beef-fat. Place
steak in a pan & thoroughly
season the under side.
Season on the reverse side.
After both sides are seasoned
turn every ten counts
until cooked. Lift onto a
hot platter. Sprinkle with
salt & serve. Avoid punct-
uring with a fork while
cooking.
