boil a quart or cream in milk with 8 eggs well beat
unclear stir it till it is a curd then strain it and mix it
with the Curds of 3 quarts of milk 3 quarters of a pound of
fresh butter 2 grated bisketts 2 ounces of blanched almonds poundd
with a little sack and orange flower water half a pound of
currants and 7 eggs spice and salt beat it up with a little
cream till 'tis very light then fill your cheese cakes
the same way you may make cheese cakes with the
curd of a gallon of milk without the eggs curd

Portugal Cakes unclear

Put a pound of unclear fine sugar a pound of fresh butter 5 eggs & a little
beaten mace into a flat pan beat it up with your hands
till tis very light and looks curdling then put thereto a pound of
flower halfe a pound of currants clean pickt & dried, beat
them together fill your heart pans & cake bake them in a flask
Slack Oven -
You may make seed cakes of these ingredients only put car=
raways in the [loom] of currants -

Shrewsbury Cakes

Take a pound of fresh [] butter a pound of double refin'd sugar
sifted fine put to it a little beaten mace and 4 eggs beat
them all together with your hands till tis very light and looks
and looks curdling then put to them a pd of half of flower
unclear roul them out in to little cakes

Wiggs

Take [] half a peck of flower a pound of sugar & an
handful of Carraways then put into the middle of the flower 3
pints of ale yest and 3 pound of butter melted in milk & pour'd
to the yest stirring it with your hands strew it flower let it
lye to spounge a little then make up your wiggs -

Ragalia of Cucumbers

Take 12 cucumbers & slice them as for eating put them in a
course cloth beat & squeeze them very dry flower & fry them
brown toss them up thick they are sauce for mutton or lamb
