Description

Allium sativum is a herbaceous bulb in the amaryllis family Amaryllidaceae. When chopped or crushed, the enzyme alliinase converts alliin into allicin (allyl thiosulfinate) which is responsible for the aroma of fresh garlic. Aka garlic, stinking rose.
