Lamb - Mutton or pork chops
1st chop. Trim any extra fat & bone
and fry out a small portion of the fat
in the pan. Heat the pan hot and place
the chop in. Brown on both sides and cook
thoroughly done. Salt liberally when after
the chop has been turned.
Indian Meal [Cornmeal] Pudding
½ c of boiling water
¼ c of Indian meal
¼ tsp salt
Mix Indian meal with a little cold water.
Add gradually to boiling water in which
salt has been dissolved. Cook until stiff
enough to hold spoon upright.
Turn into a mold.
Veal Steak
3 inches square of round of veal, Salt,
Pepper, flour, butter, & milk Beat the steak
