Welsh Rarebit
1 T butter
1/2 lb or 2 c grated cheese.
1/4 c milk
1/2 t salt
1/2 t mustard
Spk cayenne
1 egg
Beat egg. add dry seasoning
and mix well. Put butter
into a double boiler. When
melted, add milk and
cheese and stir constantly
When melted and smooth
add egg mixture and stir
constantly until lather
thickens. Serve on bread
which has been toasted
on one side only. Untoasted
side up.
