using, dust with salt, red
pepper and either lemon juice
or taragon vinegar.
Near serving time put a goodly
layer of the lobster over one piece
of bread, cover with another, press
the two to-gether, cut in triangles
and serve.
Sandwiches made from Cottage
Cheese
Cut slices of brown bread about 1/2
an inch thick. do not remove crusts.
Rub half a pint of cottage cheese
to a smooth paste then press
through a fine sieve. add slowly,
beating all the while two tablespoon-
fuls of melted butter, half a teas.-
salt and two tables. thick cream.
Spread each slice thickly mix this
cream mixture. Put on top a thin
slice of white-bread, on top of this another
layer of cheese, then another slice of brown bread.
