Preserved Citron

12 lbs of citron
9 lbs of sugar
4 Lemons
1/2 lb of Green-ginger
Boil in 2 qts of filtered water *
let stand over night, then boil
the water and add the ginger
until it is tasty of the ginger then
add the outside peel of lemon
sliced very thin so as not to have
any of the bitter skin, then add
juice of lemons and sugar, boil
until citron is clear, carefully
remove the scum.

*slowly over a moderate fire for
15 minutes.
