taste. Poor good brown gravy over. Put
crust over top with a few cuts in it.
Bake in an oven suitable for biscuits
about 45 min, longer if the pie is large.
Put a paper over top if crust browns
to much.

Ham Croquettes

Brown 1 T butter in a saucepan.
When well colored add 2 T flour
and brown again. Add a little at a time
1 cup stock or hot water and cook until
clear and smooth. Season with salt
and pepper a few drops of onion juice
and 1 t mushroom ketchup.
Add 1 c boiled rice, 1 c ham chopped
fine. Mix well and set away to cool.
Shape into croquettes. Egg and crumb.
Fry in very hot lard. Drain on brown
paper. Serve hot with any preferred
sauce tomatoes, mushroom or a good
brown sauce.
