Meat and Potatoes Scallop

In the bottom of a buttered pudding dish
put a layer of chopped meat. Season well
and moisten with broth or milk.
Have cold mashed potatoes mixed with cream
butter and seasoning. Make hot.
Put through a ricer on the meat. Put bits
of butter over. Then turn on another layer
of meat and so proceed until all is used.
Have potatoes on top. Put a cover on and
bake until through. Remove the cover
and brown delicately. Serve hot.

Hamburger Steak

Chop 1 lb round steak and a little fat
pork. Season with salt and pepper.
Form into little patties and fry
in a hot frying pan.
