Strawberry Floating Island.
Beat 2 egg yolks & 1 whole egg with
¼ cup sugar until lemon colored;
pour 2 cups scalded milk slowly
over eggs; cook in double boiler,
stirring consistently until thick &
smooth. remove from heat immediately
& cool; add 1 tsp. vanilla. Sweeten
1 pint crushed strawberries with
½ cup confectioners sugar. Gradually
add 3 tbsp. sugar to 2 stiff beaten
egg whites & continue beating until
meringue form peaks. Chill the
custard, meringue & berries seperately
Alternate layers of custard & berries
in sherbet glasses. Top with a swirl
of meringue. Serves 6.
Serve with Baked Round Steak
roll, with green onion stuffing,
[Tiny?] carrots, whole new Potatoes, mix
Diced tomatoes with cole slaw &
serve this Strawberry Floating
Island dessert.
