Scotch Scones

4 cups sifted flour, 2 tbsp shortening
1 tsp [baking] soda, 1 tsp salt
Buttermilk or sour cream
Method: Sift dry ingredients,
rub in chilled shortening
and stir in sufficient butter-
milk to make a medium
stiff dough. Sour cream
may be used if shortening
is omitted. Divide dough into
portions. Roll each circle
½ inch thick, size of a
tea plate. Bake on hot
griddle, browning one side,
then the other. Split and butter.
