Mayonnaise Salad Dressing
1 egg yolk
1 t flour
1 C salad oil
3 T lemon juice
1 t salt
Put the yolk, lemon juice + flour
into a small bowl. Beat with
egg beater till well mixed, then
pour about ½ t of oil in at the
side of the bowl + beat with
beater in such a way as to
draw the oil gradually into the
egg mixture. When the oil is
well beaten into the yolk pour
in another ½ t oil + beat it in.
As the Process goes on, a
larger amt [amount] of oil may be
poured in at a time.
