To pickle Mushroomes

Take the Buttons when thay ^are fresh gathered and putt them into water and wash them with a spunge put them into cleane water as you wash them then trim them having some water against they are ready to boyle them in so lett them haue just one boyle up then strain strain them out and putt them into a strong brine of water and salt while they are hott and lett them lye 6 houres or a night in it then strain them from the brine and put them in some of the best whitewine vinegar and lett them stand 12 days then take out the vinegar and put to them as much of the best whitewine as there was vinegar and some cloues mace nutm^egg Ginger and pepper then lett it haue a boyle and when it is cold put it to theMushroomes with a cloue of garlick or an onion stop them up uery close you may putt in 2 or 3 bay Leaves

To Caller eles

take you eles and bone them and take som pepper and salt and cloues and mace and nutmeg and a litle time and season it with then take sten them and ti them up close in a cloth and make a pickel of uinegar and and water and salt and pepper and boyl them in a quarter of a houer then take them up and let it be cold then take out the eless and but them in the pickel

To Pickle Cowcumber Sliced

Cutt the grenest of 24 cowcumbers slice them likewise slice 3 or 4 larg oinoue into them and mingel a handfull of salt amongst them in a pan and let them stand 24 houers then draine them very well then put to them as vinegas as will couer them them and lett them stand 3 or 4 houres then take the the same and a handfull of salt one oinoue of large mace whole pepper in the Pickle as hot as you can cloves and whol ginger boyle them altogether in a bagg of thin linaen then put in the bagg with the spice amongst the cowcumbers and power inthe Pickle as hot as you can couer them close with a peice of leather and and let them stand gor 10 days then take the Pickle and boyle it again withthe spice in it and putt it into the cowcumbers
