Currant Shrub.

For 2 qts of currant juice take 6 lemons (the seeds carefully removed) 6 lbs of sugar and 1/2 pt best brandy. Slice the lemons fine and boil for a few minutes in a little of the currant juice, then add the remainder of the juice, then the sugar boil 10 minutes slowly, drain, when cold add the brandy and bottle. A few spoonsful in a glass of water is most refreshing

Custard Sauce

Sweeten 1 pt milk, beat the yolks only of 2 eggs very light mix with the milk, place in a milk- boiler stir until it begins to stick to the spoon flavour with vanilla or a little wine after it has cooled to be eaten with boiled rice or any pudding. Do not let it on the fire even a minute after it sticks to the spoon or it will curdle.
