3 TB rice (or farina) 3 TB butter 2 TB flour ⅛ t pepper 1 TB salt

Boil rice and vegetables until tender. As water boils away, add more water. Add tomatoes and seasoning. Rub butter and flour together until a smooth paste is formed. Add a little soup. Then add mixture to all of soup.

Chocolate Cornstarch Pudding

3 TB cocoa 3 TB cornstarch 3 TB sugar 1 pt milk ¼ T vanilla

Mix all dry ingredients. Add milk. Cook until it thickens. Cook over hot water 15 min. Add flavoring. Cool. Serve with milk, cream or soft custard sauce.

Butter Scotch Biscuit

2 C flour 4 T Baking Powder 1 t salt 3 TB shortening about ¾ C milk 2 TB butter ¼ C brown sugar

Prepare as for biscuit. Roll out ¼" thickness. Spread with melted butter and sugar. Roll. Cut 1" thickness. Bake in hot oven 15 min.

Hard Sauce

1 C confectioner's sugar 3 TB butter 1½ TB lemon juice or 1½ TB milk and ½ vanilla or 1½ TB sherry

Cream butter and sugar together. Add liquid slowly, mixing well. Serve with hot puddings.

Pineapple Salad Fruit Salad Brown Bread Sandwiches Reception Cocoa Cup cakes

Pineapple Salad and Dressing

¼ C orange juice ½ C sugar
¼ C lemon juice 2 egg yolks
¼ C pineapple juice ½ C whipped cream
Heat fruit juice in a double boiler slowly, add sugar and beaten egg yolks. Cook over hot water, stirring till mixture thickens. Cool. Let stand on ice several hrs. Just before serving salad whip cream till stiff, add enough of cooked mixture until dressing has the right consistency, serve sliced pineapple on lettuce leaves.

Add dressing. Decorate with maraschino cherries. If candle salad is desired shave down a straight banana so that it can be inserted into hole of pineapple. Place maraschino cherry on top for coloring and insert a piece of coconut for wick.

Brown Bread Sandwiches

Slice brown bread into ¼" slices. Spread with following mixture 2 small pkg cream cheese 2 TB butter ¼ C orange juice ½ C chopped pimento 1 C chopped nuts ½ t salt

Cream cheese until smooth. Add gradually butter and orange juice. Add nuts, pimentos and cheese.

Reception Cocoa (12 cups)

½ C cocoa ½ C sugar ¼ C flour ⅛ t salt 1 qt water 1 qt milk ½ t vanilla

Cook first 5 ingredients 15 min. Add milk. Cook over hot water until hot. Add vanilla. Beat well. Serve with or without whipped cream and a sprinkle of grated choc.

Cup Cakes

6 TB shortening 1 C sugar 3 eggs 3 C flour 6 t B. P. ½ t salt 1 C milk Flavoring ½ T vanilla or grated rind of ½ lemon plus 1 t lemon juice

Cream together sugar and shortening. Add well beaten
