Meat Loaf 1/2 lbs hamburger or 2 eggs good sized onion parsley 1 cup bread crumbs. Mix and form in loaf Pour ketchup over top and add a little water. Salt & pepper Bake 1 1/2 to 2 hours. 350 degrees

Short Cut Fudge-Condensed milk

Melt 3 sqs choc. in double boiler. Add 1/3 cups Eagle Brand milk and stir over water 5 minutes until mixture thickens Remove from fire, add 1 1/2 tbs butter and 1 tbs.vanilla elt 2 cups 9 oz. confection sugar (approx. 2 1/3 cup after sifting.) Work into chocolate mixture. Fold in 1/2 c chopped nuts and c chopped dates. Put in refrigerator and chill.

Filling for Chicken (Bread) Crumble white bread into bowl. Chop one onion fine & some celery into this. Salt & pepper - Saffron Milk and lightly beaten eggs cook onion & celery in fat before adding to dry bread - For oyster fill use celery & parsley, oysters & broth to moisten

Hamburger baked with Filling

1 lb round steak, ground Filling - moist salt and pepper

Put layer meat in baking di then layer filling, etc. Top with filling & bake 1 hr. to 1 1/2 hr. 35

This may be made in a loaf pan & when cut looks like marble cake

49 can also make oyster or clam chowder ake this recipe. Chop oysters or clams.

Salmon Chowder Cook potatoes, diced, chopped onion and celery in a small amount water until soft. Add a piece butter, flaked salmon, milk alt & pepper, & hard boiled eggs last.

Oyster Pie Cook - diced potatoes, in small amount of water ntil soft. Put a large piece of butter in this, add raw oysters. yster broth strained, and hard oiled eggs & milk. Cover with pastry. rack are crumbled over top. Plain Pastry - with Crisco 2/3 cup Crisco 1/2 cup Crisco 1/4 tsp salt. 1/2 tsp. salt 3 cups flour 1 1/2 cups flour Water Sift salt with flour. Cut in Crisco. tir in gradually about 5 or 6 tbs. water Divide into two parts

Corn Chowder 1 doz Ears corn or 1 can 1 pint diced potatoes 1 1/2 in. cube bacon chopped fine 1 small onion 2 tbs. flour 1 quart milk 2 tsp. salt 1/8 tsp. pepper 2 hard boiled eggs

Cook potatoes in salt water and drain. Chop bacon and fry. Add onion. Cook Add flour (browned a bit) 1 cup water, potatoes, corn, milk and seasonings. Put in har boiled eggs and simmer for ten minutes.

This makes a very tasty dish without the milk & flour - creamed vegetables rather than a soup.

Royal Hot Biscuit (not so rich) quart flour tsp. salt tsp. Royal Baking Powder tbs. lard or butter pint sweet milk cold use cold water when no milk)

Sift together flour, salt and shortening, add milk. Cut with small cutter when rolled to thickness of 1/2 inch. Place close together. Old biscuit may be made fresh by moistening and re - heating. Very hot oven.

Apple Snow. Core, quarter and steam 3 large sour apples. Rub through sieve ool. whip whites of 3 eggs stiff with 1/2 cup powdered sugar. Add apple gradually and whip very stiff. Garnish with dots of currant jelly or cherry.

Tartare Sauce 1 cup mayonaisse. Chop very fine 1 tbs. each - olives, green pickles onions and parsley onions and garlic or half sandwich spread & mayonaise - chopped Sweet Potato Puff 4 cups mashed sweet potatoes 3 tbs. butter or margarine 1 egg 2/3 tsp. salt 1/4 tsp. paprika

Mix ingredients, pile in baking dish, dot with butter. Brown in a moderate oven - 350 degrees to 375 decrees F.

Vegetable Platter Meal 1 quart small potatoes 2 cups small or cut onions 2 cups cut carrots 1 quart string beans 2 tbs. Butter substitute

2 tbs flour or cornstarch 2 tbs. grated cheese tbs. chopped parsley Salt and pepper. Cup white sauce.

Boil potatoes, onions and carrots to gether in very little water when tender, drain. Cover with white auce made from vegetable stock Put in center of chop plate, and the string beans around the mixed vegetable. Sprinkle with cheese, parsley and paprika.

Potatoes with cheese Sauce 1 quart diced or small potatoes tbs. of butter or margarine tbs. flour cup milk tbs. grated onion tsp salt - dash of pepper

1/2 cup grated cheese

Put the diced potatoes on and boil until tender dra add the sauce and sprinkle with parsley.

Sauce. Put the butter into sauce pa with the onion, add the flour and mix well. Then add cold milk, stirring slow until smooth. Add salt & pepp

Spanish Egg Salad

4 hard boiled eggs 1 tsp. Worcestshire sauce 2 tbs. chopped stuffed olives 2 tbs. melted butter 4 tbs. catsup 4 tbs. finely chopped green pepper

1 level tsp. salt 1/8 tsp. paprika 4 cups shredded lettuce

Cut eggs in half the long way. Remove yolks, rub thru sieve, add seasonings and flavorings, mix well and fill into whites of eggs. Line individual paper cups with lettuce, put in as many halves as allowed for each person. Cover with lettuce and place cups in ice box.

White Sauce I Thin - Scalloped dishes & cream soups. 1 tbs. flour 1 tbs. butter 1 cup milk 1/4 tsp. salt Egg Sauce - a dash of cayenne & hard boiled eggs

II Medium - for creamed toast, vegetables and fish 2 tbs. flour 2 tbs. butter 1 cup milk 1/4 tsp salt.

III Thick - for croquettes 3 tbs. flour 3 tbs butter 1 cup milk 1/4 tsp. salt. use equal parts of meat and sauce

Melt butter, add flow keep hot and add milk. gradually.

Macaroni Croquettes 1/4 lb Macaroni 1 tbs. butter 2 tbs. flour
