Bake in oven until the box is delicate brown & cheese have melted.
Cheese Canapes Cut circular pieces of bread, toast them sprinkle with a thick layer of grated cheese. Season with salt & cayenne pepper. Place on a tin baking sheet. Bake until cheese is melted. Serve at once. Use ¼ cup white Sauce & 2 tblsp of green peas. (Green peas put in strainer & pour luke-warm water over them)
Nov 6th Escalloped Potates Wash pare soak & cut in thin slices 1 potato. Butter a baking dish. Put in 1 layer of potato & sprinkle with salt & pepper & dredge with flour & dot over with 1 tsp butter. Repeat in layers. Add hot milk

until it may be seen through the top layer. Bake 1 hr or until the potato is soft.
Pan Broiled Steak Remove from steak all bone fat + cartilage. Oil a smoking hot frying pan with small portions of the beef-fat. Place steak in a pan & thoroughly season the under side. Season on the reverse side. After both sides are seasoned turn every ten counts until cooked. Lift onto a hot platter. Sprinkle with salt & serve. Avoid puncturing with a fork while cooking.

Hamburg Steak 1 lb steak 1 tsp salt 1 egg 1 tsp onion juice Grind meat with a food cutter. Beat egg slightly. Add egg salt & onions juice to beef. Mix & shape into small cakes. Pan Boil.
Baked Hamburg 1 egg 1 tsp salt 1 tsp onion juice Prepare as for Hamberg Steak & shape into loaf 2½ in thick. Place in an oil baking pan. Use square tin. Bake 30 minutes in a moderate oven.

Oven Roast Choose a compacted piece of beef wipe with a clean damp cloth, place on a rack in the roasting pan. Put in a hot oven with the roaster uncovered. When well seared remove from the oven sprinkle with salt add a small amount of water to the roaster & put the lid on finish cooking
