Lemon Buns

- Radio Recipe - Mary Ellis Ames - 2/26/36

Makes 1 dozen large ones 400 F - about 10 min.

1 c milk scalded 1/4 tsp salt 1/3 c sugar 2 T butter 1/2 cake compressed yeast 1/4 c luke warm water (not hot) 1 egg well beaten 1 tsp lemon extract 4 c flour 1/2 c washed + dried currents 1 egg yolk 2 T milk

Mix all ingred. except last two (which is reserved for brushing outside). Let stand at 80 about 2 1/2 hrs. Knead, roll + cut into buns. Brush with egg + milk mixture + bake.

Quaker Oats Muffins

(copied from Florence's old manuscripts) 2/3 c. uncooked Quaker oats 1 1/2 c. flour 1 c. scalded milk 1 egg 4 tsp. bak. powder 2 tbsp. melted butter 1/2 tsp salt 3 tbsp sugar Turn scalded milk on Quaker oats and let stand 5 minutes Add sugar, salt + melted butter. Sift in flour + baking powder. Mix thoroughly + add well beaten egg. Bake in buttered gem pans.
