Cover with sauce crust and cut an opening in center of top crust, then place in oven to bake - In the meantime melt 1 Tables. butter, add 1 Tables. flour. Cook for few minutes then add strained oyster liquor. 1/2 cup water and cook two minutes. Season with 1 teas. white pepper Add 1 cup cream or milk. When pie is nearly done put a funnel in center opening and pour in as much of sauce as pie will hold. Return to oven and bake ten minutes longer.

Welsh Rarebit Grace Curtis. Melt lumps of cheese with lumps of butter. Stir in a tablespoon worchestershire sauce. Also about 1 teas. mustard mixed with 1/2 teas. red pepper. and enough beer (according to judgement) Stir constantly. Must be placed on crackers and eaten immediately while hot.

Peach Dumplings (Can also be made of any fruit) Make a good soft dough of almost a sieve full of flour, one good teaspoon baking powder, and about three Tables. butter. Work this well together. Then pour in enough milk to stiffen (Also 2 eggs) Cut off dough about size of a peach, roll out (not too thin), heap the fruit in centre of dough & sweeten, then gather the dough up around, shaping like a buiscuit. Place in baking pan. On each dumpling put a tiny piece of butter a little sugar and enough water in pan to keep from burning.

Fudges 2 cups sugar 1/2 cup milk 2 squar[e]s Bakers chocola[te] Butter size of egg. Stir all time while cooking When it hardens in cold water it is done. Pour in buttered cake pan, flavor before, cut in squares when cool.

Cocoanut squares 1 cup New Orleans molasses " " Coffee A or gran. sugar 1 tables. butter. When this has boiled a few moments stir in a fresh cocoanut chopped fine, cook on slow fire, when it hardens in cold water it is done -
