Welsh Rarebit Grace Curtis. Melt lumps of cheese with lumps of butter. Stir in a tablespoon worchestershire sauce. Also about 1 teas. mustard mixed with 1/2 teas. red pepper. and enough beer (according to judgement) Stir constantly. Must be placed on crackers and eaten immediately while hot.

Peach Dumplings (Can also be made of any fruit) Make a good soft dough of almost a sieve full of flour, one good teaspoon baking powder, and about three Tables. butter. Work this well together. Then pour in enough milk to stiffen (Also 2 eggs) Cut off dough about size of a peach, roll out (not too thin), heap the fruit in centre of dough & sweeten, then gather the dough up around, shaping like a buiscuit. Place in baking pan. On each dumpling put a tiny piece of butter a little sugar and enough water in pan to keep from burning.
