boiler until very thick, about 8 or 10 min. Remove and cool . Whip the cream. Combine half with lemon egg micture and use to fill shell. Cover with remaining whipped cream. Chill in refrigerator about 24 hrs. Serves 6 - 8 .

Molded Tuna Salad

Dissolve 1 Tb. gelatin in 2 Tb. cold water. Add to 1 can heated mushroom soup (condensed). Add 1 small can ground tuna fish ¼ chopped celery and ¼ C. chopped cucumber. Mold and serve with tomatoes and asparagus.

Combine 1 C. fine graham cracker crumbs, ¼ C. sugar, 1½ t. cinnamon ¼ t. nutmeg, ⅛ t. salt. [....] in 1½ Tb. butter, add 2 Tb. egg white

slightly beaten. Use to line 9" buttered pie plate. Bake 5 min in 350° oven. Cool. Scald ½ C. milk. Stir into ¾ C. sugar, mixed with ⅛ t. salt and 3 beaten egg yolks. Cook in double boiler over hot, not boiling water stirring until mixture coats spoon. Remove, stir in 1 Tb. gelatin that has soaked 5 min in ¼ C. cold water. When mixture is cool, fold in 3 egg whites, beaten stiff and 1 t. vanilla or rum extract. Chill until beginning to set. Pour into crust. When firm, before serving top with ½ C. heavy cream whippped and 2 Tb. grated semisweet choc.

grated orange rind. Chill until beginning to set. Add 1 C. cream whipped. Pour into baked 9" pie crust. Before serving, arrange 5 sections of orange, pinwheel fashion on top of pie and sprinkle with ½ C. coconut.

Applesauce Pie

Roll about 4 C. cornflakes with a rolling pin until fully crushed. To 1 C. of these fine cornflake crumbs Add ⅓ C. melted butter and ¼ C. sugar Line 9" pie plate and chill Heat 3 C. canned or thick sweet applesauce with 1½ t. lemon juice and ½ t. powdered cloves. Add 2 Tb. plain gelatin, soaked in ¼ C. cold water for 5 min. Stir until thoroly dissolved. Chill. Turn chilled apple sauce into cornflake lined plate, spreading it well to the edge. Whip ¾ C. heavy cream. Add 1 Tb. conf. sugar and spread. Garnish with sprinkle of cloves

Pineapple Whip Pie Scald ¾ C. milk in double boiler. Beat 2 egg yolks slightly add ¼ C. sugar and ⅛ t. salt. Add to milk and stir and cook over hot water until mixture coats spoon. Remove. Add 2 t. gelatin soaked in 3 Tb. cold water for 5 min and stir until dissolved Add ½ t. vanilla and cool thoroly. then fold in 1 C. cream whipped and 1 C. canned pineapple tidbits, drained. Beat 2 eggs

Remove and add gelatin, stirring until dissolved. Cool and chill until it begins to thicken. Beat 2 egg whites until stiff but not dry Slowly adding sugar while beating fold meringue and ½ C. cream, whipped into cranberry mixture. Pour into shell and chill.

Seafood Chowder

2" cube salt pork 1 8oz can salmon
½ C. sliced onions 1 6½oz can crabmeat
2 C. hot water 4 C. milk
1¾ C. potatoes, cut in narrow strips
1 t. salt
¼ t. pepper
Saute salt pork, cut in very small pieces until golden brown. Add onions, water, salt, pepper. Cover and cook until potatoes are tender, about 25 min Add salmon in large pieces and crabmeat Add milk and heat. Serves 4-6
