Delicious White Bread

1 C. milk 1 Tb. shortening
⅛ c. gran. sugar 1 C. warm water
2 t. salt ½ C. compressed yeast
⅛ C. lukewarm water
About 6 C. all purpose flour
Scald milk, Add sugar salt, shortnening and warm water and stir until shortening is melted. Cool to lukewarm. Add yeast which has been softened in the ⅛ C. lukewarm water. Add flour gradually, mixing thoroly until you have a stiff dough that can be turned out onto a floured board and kneaded. Knead until smooth and satiny, about 5 min. Shape into a smooth ball. Place in a greased bowl, brush top with melted fat or salad oil. Cover with a clean towel and let rise in a warm place (80-85°) until double in bulk. Punch down dough, shape

into ball again, cover with clean towel and let rise again, until double Turn into floured board, and divide in half. Round up each half into a smooth ball. Cover with clean damp cloth and let rise 15 min on board. Shape into loaf and place in greased pans 9½x5½x2¾ [inches] Cover with clean towel, place in warm place and let rise until double Bake in 400° oven for 45 min. Makes 2 loaves

Add to first mixture, Next, add beaten egg, greated cheese and as much of the flour as can be stirred into the dough without kneading. then knead on a floured board until easily handled 2-3 min. Shape into 1 loaf and place in a greased pan 10x5x3½ Cover with clean towel and allow to rise in a warm place until nearly double. Bake in 375° oven for 45 min or until done. Remove from pan brush with melted butter and cool 1 loaf.

Orange Bread

1 large, thick-skinnned orange 1¼ t. salt
1 cake compressed yeast
¼ C. gran. sugar 1 egg, beaten
¼ C. butter about 3 C. sifted flour

sugar, butter and salt and bring to boil. Cool until lukewarm. Add crumbled yeast and beat with rotary beater till well blended. Add beaten egg and enough flour (about 2½ C. ) to make a stiff dough. Knead on floured board for 5 min adding flour as needed to keep it from sticking to board. Cover with clean towel and let rise until double. Then knead for 1 min Shape into loaf and put in a greased loaf pan. 10x5x3½ cover and let rise until a little more than double. Bake in 375° for 50 min Brush with melted butter. 1 loaf

Choc. Halfway Cookies

1 C. shortening 1 t. vanilla
½ C. gran. sugar 2 C. sifted flour
1½ C. brown sugar, firmly packed ¼ t. salt
1 t. baking p. [powder]
2 eggs separated ¼ t. baking soda
1 Tb. cold water 1 7-oz bar semisweet choc. (48 squares)
Cream shortnening until light. Add gradually gran. sugar and ½ C. brown sugar. Add slightly beaten egg yolks, water and vanilla. Sift dry ing. together and add to, combining thoroly. Spread evenly in 2 greased 8x12x1 pans, smoothing out dough with spatula. Sprinkle with choc. cut along [.......?] Beat egg whites stiff, then add gradually remaining brown sugar. Spread smoothly on top of choc piece. Bake in 375 oven for 25 min. Allow to stand until almost cool Carefully cut into 2" sq. [squares] the remove. Leave cubes exposed to air overnight before serving.
